Sansa is very wary of magic. She's seen a bit of it in her canon - dragons can only be commanded by Targaryens through the use of High Valyrian and it's implied a bit of magic is involved and the Red Priestess Melisandre can summon fire and resurrect people, including her own brother Jon. Sansa does not trust this magic. She believes in things that she can see and touch and does not like the idea of supernatural powers that she cannot control.
Due to most of her life being out of her control, Sansa likes to control every element of her current life. Being subjected to fae magic would make her highly uncomfortable as she is a queen in her own canon and able to make her own laws and dictate what happens to her person at any point in time. Within the game, that will not always be possible and will provide opportunities for her to grow as a character but at this point in time, magic is something that she does not trust and is somewhat fearful of.
Sansa would absolutely want to be a werewolf. Direwolves are the sigil of her house and she owned one as a child that was tragically killed due to circumstances out of her control. Her brother's direwolf, Ghost, makes her feel safe and she feels a kinship with wolves that goes beyond thinking of them as pets. In her canon, some of the Starks are able to warg, which means they can see through the eyes of their direwolves, and Sansa never got the chance to make that bond with her wolf. Becoming a werewolf means a way to protect herself from those who might hurt her while also being in a familiar form that comforts her. Losing control at the full moon would be a trade off she could accept - especially since werewolves tend to ignore loved ones in favor of strangers.
She would absolutely fear being a cerberus. Her abusive husband, Ramsay Bolton, kept packs of vicious dogs which he used to terrify her and others during Sansa's marriage/captivity. Becoming anything that reminded her of those dogs would remind her of Ramsay and make her feel as though she had a connection to him. His last words to her were that he would "always be a part of her now" and if she were a cerberus, she would feel like this came true for her. It would affect her deeply on an emotional and psychological level.
Sansa would wish to see her mother again. Sansa went to King's Landing as a twelve year old girl and never got to see her mother again after that point since they were separated while she was held as a hostage by the Lannisters and then Catelyn was subsequently murdered at the Red Wedding. Sansa feels as if her mother could have given her valuable advice over the balance of her life and might have protected her somewhat from the horrible things that have happened to her.
Prior to going to King's Landing, Sansa was closest to her mother out of all of her family. She emulated Catelyn Stark and wanted to do everything she could to become a proper lady and eventually the wife of a lord. Even from the age of four years old she was trailing along behind her mother to learn how to be the lady of the castle and she dedicated herself to sewing, to managing a household, to doing all of the things that Lady Catelyn did to help manage Winterfell.
If Sansa saw her mother again, she would tell her that she loved her, deeply, and that she never meant to leave her permanently. She would tell her that she came back to Winterfell as a queen and that the North was free of southern influence forever. Sansa would trade almost anything for that moment, anything except her own death.
Sansa would be extremely tempted to follow her one of her parents to a new world. Both Sansa's father and mother died when she was extremely young and a lot of the tragedy that happened to her would have been prevented if one of them had been alive. However, ultimately, Sansa would not choose to follow them and leave behind Winterfell.
As Queen in the North, Sansa knows that her people need her. There is no other Stark to rule in Winterfell than her and for over a thousand years, a member of House Stark has sat on the Winter Throne in Winterfell to help guide and provide justice for the people of the North. She is that Stark now, for better or worse, and she takes her duty very seriously. She has guided her people through both war and near-famine plus a grueling winter so doing something as selfish as walking away from it all is something she wouldn't do.
Sansa is described as being most like her mother, Catelyn, and her mother comes from House Tully whose words are "Family, Duty, Honor." Sansa tries to live that in her daily life and breaking her duty would be dishonorable to her. As much as she loves her family and would want to go to a place where she had one of them back - she couldn't leave Winterfell and abandon her people.
